Title: Mexican Beef Stir-Fry

1lbBeef round steak - trim well
2tbOil
1tsCumin, ground
1tsOregano, dried, crushed
1 Clove garlic, crushed
1 Pepper, red bell, cut thin
1mdOnion, cut into thin wedges
1mdJalapeno pepper, cut into slivers
3cLettice, romaine, cut 1/4"

Partially freeze beef and cut into 1/8 inch strips. Combine oil, cumin, oregano and garlic. In a skillet, over medium high heat, heat half the seasoned oil. Add bell peppers, onion and jalapeno pepper. Stir fry until tender crisp. Remove and reserve. Stir-fry beef in remaining oil for 1 to 2 minutes. return vegetables to skillet and heat through. Serve hot. Makes 4 servings. Each serving = 229 calories, 10.9 g fat, 3.7 mg iron, 65 mg sodium, 65 mg chol. Percent of calories from fat = 42.8%
